Happy Monday everyone! Hope everyone’s week is off to a good start!
This morning I made a new breakfast recipe and wanted to share it. I eat eggs almost every morning, so I’m always looking for ways to switch up the usual fried egg with avocado (although I have yet to get sick of that combo! 😉 )
I’ve seen these “egg muffins” all over the blog world, and finally tested them out for myself! Seriously the easiest thing I’ve ever made. EVER. And they have bacon. How can you even go wrong with bacon? I’ll tell you how. YOU CAN’T.
These would be great to make ahead of time and have to eat throughout the whole week, too. Or, if you’re short on time in the mornings but still want to make them fresh, these are so easy to pop in the oven while you are getting ready. Literally takes about 30 seconds to prepare!
Bacon Wrapped Spinach Egg Muffins
12 pieces of bacon
salt and pepper to taste
coconut oil to grease pan
Preheat oven to 400.
Spray/grease muffin pan with coconut oil.
Wrap one slice of bacon around each hole in the muffin pan so it covers the sides of the whole.
Crack one egg into each hole.
Add spinach to each egg.
Season with salt and pepper as desired.
Bake until the eggs reach desired consistency. (Less time for a more runny yolk, longer for harder yolk, etc,). Mine took somewhere around 15-20 minutes.
