Banana Cinnamon Chocolate Chip Muffins

Why am I just now discovering that  canned coconut milk in your coffee as creamer is a gift sent from heaven? Literally. Am I late to the paleo coffee party or what. I literally want to drink coffee all day long now.  I need to find a bigger travel mug.

I ate a chocolate chip muffin over the weekend. And said muffin did not do fun things to my blood sugar.  Shocking, really, I know.  But sometimes a girl just wants a chocolate chip muffin, ya know what I’m sayin’?  So that’s what I’m bringing you today.

But before we get to that, I have some BIG news. REAL big news.

Calm down, I didn’t go on any dates or get a new boyfriend. But let’s be real, we all know that would be pretty shocking news. It’s actually better than a new boyfriend. It’s a new blog!!!! Yep, you heard it right.  I finally made the leap to self-hosted.  Talk about big girl status.  I could not be more excited! The new site will have a new name and everything, but don’t worry, I will keep you updated when it’s all ready! Which could be awhile.  You see the thing is, WordPress is actually extrememly complicated.  Especially the whole design/layout thing.  I’ll be honest.  I have NO idea what I’m doing.  So I’m either going to have to spend endless hours trying to become a web master (is that what they’re called?)  or I’m going to have to enlist some help. But I hear these types of helpers can be a pretty penny.  And we all know I’m a broke college student.  So if there is anyone out there reading this who is a web design/Wordpress genius or knows of one, this is my desperate cry for help.  HALPPPPP.

Okay, okay. I’ll stop sounding so desperate. Now go make these muffins.

Banana Cinnamon Chocolate Chip Muffins



2 bananas

1 cup sunflower seed butter (or other nut butter)

2 eggs

1 tsp vanilla

2 tbsp honey

1/2 tsp baking soda

1 tbsp cinnamon

1/2 cup Enjoy Life Chocolate Chips (or dark chocolate chips)


1. Preheat oven to 400 degrees.

2. Line a muffin tin with paper/silicon liners.

3.  Mix all ingredients except chocolate chips together in a blender/food processor until everything is incorporated.

4. Mix in chocolate chips.

5. Fill cups 3/4 full with batter (you can top them with more chocolate chips if you want!)

6. Bake for 15 minutes.

7. Let cool on wire rack and remove from tin.

8. Try not to drool all over them (it’s difficult).

Makes about 10 muffins.
